What is Hoi An cuisine, exactly?
It's the food of Central Vietnam: bold but balanced, humble but exacting. Mì Quảng — turmeric rice noodles under a scant, intense broth, topped with peanuts and a toasted rice cracker. Hoi An chicken rice — rice cooked in chicken stock, hand-shredded free-range chicken, Vietnamese coriander and simmered chili sauce. Bánh nậm and bánh lọc, delicate dumplings steamed in banana leaf. And to finish, xoa xoa — the old town's jelly dessert, cool and barely sweet.

Bếp Người Hội An (“The Hoi An Person's Kitchen”) was opened by Thiên, an IT engineer who left a ten-year career to carry on his mother's noodle cart from Hội An. Yellow walls, silk lanterns, wooden tables — many guests say walking in feels like stepping through a door into the old town. The Michelin Guide has kept the restaurant in its Selected list three years running (2024–2026), and it holds 4.5 stars from over 470 Google reviews.
